The second installment in our Beaver's Revenge two-part Knob Creek barrel pick is here, and it's AWESOME!

In our original Double Barrel pairing (the first two Knob Creek bourbons we ever put out), our friend Stachey the Hunter gave Beaver quite a double-barreled suprise. This time it's Beaver's turn for some serious payback! Beaver's Revenge #2 (aka "....Revenge!") has finally arrived.

Nine-year, 120 proof Kentucky bourbon? YES PLEASE! This stuff is just soooooo good.

We loved this barrel because the nose came out with super rich baking spices and sweets. Chocolate covered pretzels, soft nougat, brown butter, it's all in there. The nose takes you right into a bakery making buttery chocolate croissants. Then the spice starts to come out, fresh ground black pepper, some carraway, chile bbq notes. Then finally a nice wrapping of wood, sweet charred oak coating all those glorious sweets and spices.

The vicosity level is off the charts, the palate really coats the tongue with wonderful oils, like caramel sauce, and little pops of movie theater popcorn butter.

This finish is super long and cozy. We can't get away from the lovely movie theater popcorn note. You know, that stuff that comes out of the big machine that's so over the top oily and flavorful, you know it's incredibly bad for you, but nonetheless you spend a good 60 seconds slowly covering your entire jumbo bucket in it! It's like uber-butter, just super flavorful in a blissful overdose of lipids and sodium.

Anyway, the movie theater popcorn thing invades your mouth on the finish and then it continues back into the caramel, cocoa, nougat, and baking spice area. Ending with some charred oak, a hint of spice, and just a ton of warmth. This is just a lovely barrel with everything we look for in a bourbon. It's the last Knob we'll do until next year so don't miss out! You'll want to have both "Beaver's" and "Revenge" on the shelf, so be sure to pick up the pair!
